Berkel Slicer – Model 12
This model dates back to the post-war period. Itis an italian product made by “THE AUTO-SCALE SLICING-MACHINE Milano”, the company which, at that time, was responsible for the import, distribution and assembly of BERKEL slicers.
The Berkel slicer model 12 was launched as an economical model, firstly compared to the prestigious 8 and then to the 21, and it was built using the remaining parts of model 7, just updated and improved in some details.
The machine has the carriage sliding on the pivot and a flywheel-operated movement of the closed type with decals. The upper carries the worm screw, covered by a casing and with a ratchet system, to drive the thickness adjustment “clock”; the latter is of new manufacture, with a plastic knob. An important change is the top of the carriage where, unlike the model 7, a safety hook/release is applied.
The clamp of Berkel 12 is “open” arm type, fixed at the back with two small columns and open at the front, with free access for large products.
The sharpener is covered by a “cap” on the top and a template on the front.
The blade, 370 mm in diameter, is mounted on the arched shoulder with a thick white opaline glass top.

The model 12 is totally italian, it’s an ancient piece which, in its time, was part of an economic bracket compared to other models.
