Berkel Slicers - Our new slicers

Berkel Slicers – Flywheel B114

The Berkel B114 flywheel slicers are made for intensive use and are suitable for all types of cold cuts, in particular for raw hams and more valuable cold cuts. Due to their high performance, these luxury slicers are ideal for environments such as a delicatessen or wine cellar.

Constructed in painted aluminium with stainless steel details, they are equipped with a built-in sharpener and slice thickness adjustment by means of traditional and precise mechanical movement.

The Volano B114 slicer is available in both standard red and black versions. All versions can be supplied with a cast iron pedestal in a matching colour. Please note that some details may differ from those shown in the photo.

The B114 flywheel features a German 100cr6 steel blade, with a diameter of 31.9 cm and a circular cutting capacity of 21.5 cm. It allows for a maximum slice thickness of up to 1.5 mm. The concave shape of the blade like a razor caresses the product at the cutting point only, avoiding alterations in taste and aroma.

The Volano B114 slicers all have a built-in sharpener, which allows the blade to be sharpened correctly, prolonging its life and always guaranteeing a perfect cut. Positioning is done manually, simply by lifting and rotating the sharpener. There is only one position, which does not require manual adjustment and always guarantees the perfect angle for optimum sharpening.

The locking and unlocking system of the double-column pusher allows a perfect hold of the product on the chopping board: chopping board and pusher are made entirely of stainless steel.

At La Bottega del Restauro we sell these vintage-looking pieces by appointment only, as the number of requests is quite high and for some colours a longer wait may be necessary. Contact us to receive a free estimate or if you would like to have more information. We ship in Italy, but also abroad.
