Berkel Slicer – Model R

DESCRIZIONE

Created in the period between 1912 and 1918, it is imported and distributed in Italy by Bach & Co of Milan. We know little about the Berkel R model due to the few examples produced: it is a very rare piece of rather ancient origin.

Built for a specific use, it is a large model. The carriage runs on four wheels, but is guided on one side by a large flat-shaped guide. On the carriage is applied the advancing screw of the plate, moved by a system with cam and connecting rod; the upper clamp has two small columns (front and rear) with quick releases. The blade, 350 mm of diameter, is mounted on the round shoulder to which the metal glove box and plate are attached. In the upper part of the shoulder there is the blade sharpener, made up of several chrome-plated pieces, all visible and without casings.
